Pistachio Nougat & Strawberry Cupcake | Cupcake Jemma
Today we’re in the kitchen with Jemma whilst she workshops a new cupcake flavour to hopefully join the menu at our Soho store. Pistachio Nougat & Strawberry, a combination rarely thought of but goes unbelievably well together. Should this join the menu in store, would you change anything, let us know in the comments below?
CUPCAKES
125g Self Raising Flour
1⁄4 tsp Bicarb
125g Caster Sugar
2 Large Eggs
1 1⁄2 tbsp Milk
25g Pistachio Paste
5g Freeze Dried Strawberry Bits
STRAWBERRY ITALIAN MERINGUE
100g Egg Whites
235g Caster Sugar
20g Liquid Glucose
80g Water
2 1⁄2 tbsp Freeze Dried Strawberry Powder
Pink Gel Colour
NOUGAT
55g Butter
200g Caster Sugar
60g Evaporated Milk
213g Marshmallow Fluff TM
1⁄2 tsp Vanilla Extract
70g Pistachio Paste
100g Chopped Pistachios
Plus Pistachios and Freeze Dried Strawberries for decoration

    Hi you have listed the sugar twice once when you make the cake and then again just below the salt in the ingredients. Is this a misprint because you don’t mention the second sugar amount in your video. Please advise. Thanks.

    Easy recipe? Put butter on 1 side of your bread of choice, sprinkle with white or brown sugar, put in oven on Broil until golden brown. OR butter 1 side of bread, put in oven on Broil until golden brown, add honey to the top & eat. Both are delicious n super easy. I thought that's what this vid was gonna be when I first read the title 😊

    Just made these - have to say I’m not a fan. They just seem wayyyyy too sweet, even without the icing. If you’re concerned about sweetness maybe cut the amount of cinnamon butter in half - or maybe you could omit it altogether and just have pecan praline? I cooked mine for 30 rather than 15 minutes as they didn’t look done (very pale) after 15. Have made loadsss of cupcake Jemma recipes and this is the first one I didn’t like - think I’ll stick to classic cinnamon rolls or the hot cross bun rolls that cupcake Jemma posted before Easter.
